Creative Summer Salad Recipes
Beautiful summer days should be matched by great food and company. For starters, fresh salads make the perfect appetizer! Served outdoors with some chilled lemonade, it’s a healthy way to say, “thanks for coming”. How many different salads can you make? I’m guessing not too many--there’s only so many ways to make lettuce exciting. So to help inspire you, I’ve put some ideas together. It’s time to get creative with these summer salad recipes.
Pomegranate Feta Salad
1 (10 ounce) package mixed baby greens
1 pomegranate, peeled and seeds separated
1 (8 ounce) package crumbled feta cheese
1 lemon, zested and juiced
1 teaspoon Dijon mustard
3 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil
Salt and pepper
Place the lettuce, pomegranate seeds, and feta cheese into a large mixing bowl; set aside.
Whisk together the lemon juice and zest, mustard, vinegar, olive oil, salt, and pepper in a separate bowl. Pour over the salad and toss to coat. Serve immediately so it doesn’t get soggy.
1 package of coleslaw veggie mix
1/2 cup mayonnaise
2 tablespoons white sugar
1 1/2 tablespoons lemon juice
1 tablespoon vinegar
1/2 teaspoon ground black pepper
1/4 teaspoon salt
Whisk mayonnaise, sugar, lemon juice, vinegar, pepper, and salt together in a bowl until smooth and creamy.
Add the dressing to the coleslaw veggie mix. Serve alone as a healthy snack or a side at mealtime.
Spicy Strawberry Salad
2 cups of spinach
½ cup alfalfa sprouts
¼ cup of diced cucumber
¼ cup of green onions
¼ cup pine nuts
¼ cup strawberries
Goat cheese (sprinkle as desired)
Kraft Mango Chipotle dressing
Combine spinach, alfalfa, cucumbers, onions, pine nuts and strawberries in a bowl. Mix together and then sprinkle goat cheese as desired.
Pour on the Kraft Mango Chipotle dressing or something similar with spice to get a tangy effect.
